Radiatore:

Short, curly pasta. Similar to Rotini or Fussili.

Cooking instructions:

  • Boil a large pot of water (salt recommended).
  • Put pasta in.
  • Cook for 7-10 minutes at a gentle boil.
  • Drain well.

Spinach Cesare:

Short, dense pasta made with fresh spinach. Similar to Troffi or Penne.

Cooking instructions:

  • Boil a large pot of water (salt recommended).
  • Put pasta in.
  • Cook for 10-15 minutes at a gentle boil.
  • Drain well.

Linguine:

Long, thick, flat pasta. Similar to Fettucine.

Cooking instructions:

  • Boil a large pot of water (salt recommended).
  • Pull strands apart before placing pasta in water.

  • Cook for 7-10 minutes at rapid boil so the pasta don’t stick to the bottom of the pot.

  • Drain well.

Spaghettini:

Long, thin pasta. Thinner than regular Spaghetti.

Cooking instructions:

  • Boil a large pot of water (salt recommended).
  • Pull strands apart before placing pasta in water.

  • Cook for 5-7 minutes at rapid boil so the pasta don’t stick to the bottom of the pot.

  • Drain well.

Lasagna Sheets:

18.5″ x 3.5″ in size. 

Cooking instructions:

  • Varies depending on your ingredients.

  • No need for pre-cooking- layer the sheets and your ingredients as desired. Add water to help cook the pasta- we recommend the ratio of 4 parts sauce-1 part water. Less water if you’re adding vegetables with high water content.

  • Cook for approximately 1 hour at 350°F/176 °C or until internal temperature reaches 200 °F/95 °C.

Ravioli:

Stuffed pasta squares. Filled with ricotta, fresh spinach, Parmesan, Romano and Sardo cheeses.

Cooking instructions:

  • Boil a large pot of water (salt recommended).
  • Do not let pasta thaw- put straight into water from freezer.

  • Cook for 6-7 minutes at a gentle boil making sure they have movement.

  • Drain well.

Plum Tomato & Basil Sauce:

Our signature sauce with plenty of herbs and flavour.

Alfredo Sauce:

A thick, rich and creamy white sauce.

Bolognese Sauce:

Northern Italian style, slow-cooked tomato meat sauce with veal, beef and pork and a touch of cream.

Pizza Dough:

Made simply with flour, water, salt and yeast.

Cooking instructions:

  • Preheat oven to 350°F/176°C.
  • Allow dough to reach room temperature for 30 minutes.
  • Gently roll dough flat on counter-top with flour.
  • Bake with sauce only for 15-20 minutes.
  • Add your toppings. Bake for another 15-25 minutes or until toppings are cooked and base of pizza is coloured and crusty.

Meatballs:

Pre-cooked, golf ball-sized delights. Moist, flavourful and ready to take home.
